For VPS servers, in any case, you will have your own unique IP address. Or do you want to take an additional one? If I'm not mistaken, then in any case, you need to pay extra for an additional IPv4.
Regarding VPS for your websites, you should know the following:
- PHP version that should be supported for the sites;
- database version;
- how much disk space you need to allocate;
- how much traffic the sites consume;
- what VPS settings you have previously used, etc.
